“Rolu” is a stone device, widely used in rural areas for grinding .So this is called “roti pachadi”.
(‘Rolu” is replaced by” Blender” in modern day)
Basic Ingredients:
Oil- 3 tbs
Ridged gourd-1 large
Tomato medium-1
Green Chillies-5 to 6
Tamarind-small lemon sized or less
Salt- to taste
Ingredients for tampering:
Oil- 1 1/2 tbs
Hing-1/4 tbs

Curry leaves-few
Garlic pods-2 chopped
Bengal gram/Chana daal-1 tbs
Black gram/urad daal -tbs
Mustard seeds-1/2 tbs
Cumin seeds-1/2 tbs
Coriander-little bunch
Preparation Method:
Take the ridged gourd, peel off the ridges. Wash it and cut in to small pieces. Now chop the tomato green chilies.
Heat oil in a pan and put ridged gourd pieces, chopped tomato and green chillies.Now cover it with a lid and cook on a medium low flame until the moisture is gone and some traces of oil shows up with some occasional stirring. Now take off the pan from the flame and cool it.
Now grind the above in blender to a smooth paste with required salt and tamarind. Now take it in to a bowl.
For tampering part—heat the oil in a pan and and put mustard seeds and let it crackle. add hing, chana daal,urad daal ,cumin ,chopped garlic, curry leaves one by one. When the color of chana daal starts changing then it is the indication that the tampering is ready so immediately take off the pan from flame and pour this mixture on the chutney and mix well.Garnish with chopped coriander.
Hence the final outcome is Beerakaya pachadi..
Points to note:
Use green chilies according to the hotness of chilies and u r resistance to hotness.
U can also increase the number of tomatoes and decrease the amount of tamarind but don’t take too many tomatoes. 2 medium would do fine.
