Kakarakaya vulli kaaram / Bitter Gourd Andhra style / Bitter Gourd or Bitter Melon fry

This is a different kind of Bitter Gourd preparation which is widely followed in Coastal Andhra.
Bitter Gourd-1 kilo
Onions-1/2 kilo
oil-for deep frying
green chillies- 5 to 6
garlic pods-7
curry leaves-few
turmeric powder-1/4 tbsp.
chili powder-1 tbsp.
beaten yogurt-1 cup
salt to taste
cut bitter gourd in to 1 inch pieces,length wise. boil these pieces with yogurt , water & salt until they are soft(it shouldn’t be too soft) .Cool it off and drain the excess water and also squeeze the pieces to remove water .
Now take oil in a pan for deep frying and fry these pieces and keep them aside.
take onions,garlic pods and green chillies in to a blender and ground them to paste.
Now take 8 tbsp. of oil in a pan and fry the onion paste.while frying add little salt.
Add the deep fried bitter gourd pieces when this paste starts leaving the oil.
And keep on frying.After you get the golden brown colour then add turmeric powder,red chili powder .
stir well.adjust the salt .take in to a serving bowl.garnish with coriander.
