Veg pulao is a very easy and healthy dish.Veg Pulao with raitha or veg Pulao with Mirchi ka salan is a great combination.
Ingredients:
Rice-1 cup
Water-1 1/2cup
Oil/Ghee-4 tbs
Vegetables
Green peas-1/4 cup or less
Carrot-1 carrot chopped
Beans-4to 5 chopped
Onion-1 chopped
green chillies-1or 2 chopped(optional)
Coriander leaves-1 small bunch chopped
Mint leaves -1 small bunch chopped
Ginger &garlic paste-1tbs
Garam masala powder-1/2 tbs or less
Red chilli powder-1 tbs
Turmeric-2or 3 pinches
salt-to taste
Preparation Method:
Wash & soak the rice for at least 1/2 hour and then strain the water and keep it aside.
Take a pan and heat the oil.Fry the onions till golden brown.
Add ginger garlic paste and sauté for 2 minutes.Add garam masala,red chilli powder,turmeric and sauté for 1 more minute
Add all the vegetables,salt and sauté for 2 minutes.
Add water and wait until it comes to boil.
Now the rice to the above
Let it cook until the rice is done on a medium low flame.It will take about 15 to 20 minutes
Finally the pulao will be ready.
Serve this Pulao with raita or Mirchi ka salan or with a basic gravy.
Tips:
Though we can use any kind of rice, Basmati rice is a best pick so that the pulao will look great.
you can add as many diverse vegetables as you like.For example Potatoes, Capsicum,Cauliflower
Grounded coconut paste adds a good taste
Instead of garam masala you can use whole spices,crushed(cloves,cinnamon,coriander seeds,cardamom)
Can also add soya chunks or soya balls to make it more healthy.For this soak the soya chunks for 10 minutes and squeeze the water ,add this after ginger garlic paste got sautéed.
